As a Sous Chef, you'll play a pivotal role in the daily culinary operations of our restaurant, in-room dining, and catering programs. Reporting directly to the Executive Chef, you'll help lead the kitchen team, uphold food quality and consistency, and ensure operational excellence—all while embracing The Kessler Collection’s standards and core values.
Responsibilities:
- Oversee day-to-day kitchen operations in collaboration with the Executive Chef
- Manage food preparation, presentation, and consistency across all culinary offerings
- Maintain and update a comprehensive recipe file, including ingredients, portions, and methods
- Ensure portion control and food cost guidelines are met
- Monitor daily inventory levels and assist with ordering as needed
- Uphold kitchen sanitation, safety, and cleanliness standards
- Lead, coach, and train kitchen staff in proper techniques and procedures
- Conduct kitchen team meetings and daily walkthroughs to ensure readiness
- Participate in performance reviews, team development, and disciplinary actions when necessary
- Support menu development and contribute innovative culinary ideas
- Act as the kitchen lead in the Executive Chef’s absence
- Assist with food cost tracking, monthly inventory, and budget control
Education & Experience:
- Culinary degree or equivalent hospitality/restaurant industry training – required
- Minimum 2+ years of experience in a Sous Chef or similar leadership role – required
- Luxury hospitality or fine dining experience – preferred
- Food Safety Manager Certification – preferred (or must be obtained within 30 days)
