Under the direction the Manager, prepares and cooks a variety of foods for use throughout the
facility in such a manner as to ensure an efficient and effective food service. Cook or otherwise prepare cooked foods according to recipes or give instructions to good service workers as to size of portions and methods of garnishing
Prepare specified foods, including soups, sauces, vegetables, starches and entrees as outlined on menus and production sheets
Follow recipes and accurately measures, prepare and combine recipe ingredients according to the standardized recipes, utilizing portion scales, measuring cups and spoons
Safely employ a variety of equipment and utensils such as blenders, mixers, and slicers in accordance with manufacturers guidelines, using the proper utensil or piece of equipment for the job. Slice or carve meat, fish and fowl, accurately for individual servings and in accordance with production sheets, following correct meat slicing guides
Monitor food being prepared and make appropriate adjustments to ensure quality standards are met and add seasonings to food during mixing or cooking as needed
Observe and test food being cooked by tasting, smelling, or checking to determine that it is cooked according to standards
Review work schedule to ensure that all food is completed by the specified times
Routinely review menus, advance preparation sheets and production sheets to determine type and quantity of products to be prepared
Routinely check thermostat controls to regulate the temperature of ovens, broilers, grills, roasters, and steam kettles. 1+ years institutional or large Quantity cooking experience preferred
Ability to interact and communicate with all staff and management in English in a positive and professional manner.
Ability to communicate appropriately verbally and in writing using the English language
Ability to comprehend instructions, correspondence, memos and other forms of verbal and written communication.
Ability to read and follow recipes.
Ability to give clear, concise and complete directions.
