We are seeking an experienced and driven Restaurant Chef to manage all aspects of day-to-day culinary operations across the hotel’s food & beverage outlets. This hands-on role provides both technical and administrative support to the Executive Sous Chef while leading the kitchen team to ensure culinary excellence, operational efficiency, and exceptional guest satisfaction.

Key Responsibilities:

• Develop seasonal and trend-based menus with accurate cost analysis and abstracts
• Maintain up-to-date prep checklists, position guides, and operational documentation
• Track daily raw food costs, monitor waste logs, and ensure efficient inventory control
• Assist with banquet production as needed, collaborating across departments
• Provide mentorship and support to junior chefs and line staff
• Ensure cross-training and ongoing development to meet outlet standards
• Train both BOH and FOH teams on new menu items, preparation methods, and flavors
• Maintain proper staffing levels for productivity and service quality
• Collaborate with FOH leadership to enhance guest satisfaction
• Attend hotel and departmental meetings and contribute to initiatives
• Set a positive example in guest relations and handle escalated issues professionally
• Uphold and enforce food safety standards (ServSafe, ECOSURE, Health Dept. regulations)
• Maintain kitchen cleanliness and report/resolve equipment malfunctions
• Ensure all staff are trained in safety protocols and loss prevention policies

Administrative Duties:

• Oversee purchasing and supply levels in line with budget targets
• Manage labor and food costs to ensure profitability across outlets
• Support the interview and onboarding process of new team members
• Conduct performance appraisals, provide feedback, and document performance

Qualifications & Requirements:

• Proven leadership experience in high-volume hotel or restaurant kitchens
• Strong understanding of culinary techniques, food costing, and kitchen operations
• Demonstrated ability to lead and train diverse teams
• Excellent communication, organizational, and problem-solving skills
• Must be ServSafe Manager certified
• Ability to work a flexible schedule, including nights, weekends, and holiday
