The Head Cook oversees daily kitchen operations and production matters such as product varieties, flavors, production procedures, and raw material selection. This role is responsible for managing, disciplining, training, and guiding the Kitchen Production team. The Head Cook ensures the production of assigned products including BBQ, Hot Food, Dim Sum, Sushi, and other finished or semi-finished items aligns with order requirements, quality standards, inventory control, and waste management. They supervise the team to maintain food safety compliance and adhere to corporate policies.
Key Responsibilities:
- Oversee kitchen production processes and maintain a safe, efficient working environment
- Manage team performance, provide discipline, and deliver specialized training in assigned areas
- Monitor production efficiency and productivity during work-in-progress
- Prepare, handle, clean, cut, marinate, cook, and produce food in correct quantities per orders
- Follow recipes, ingredient specs, quantities, quality, and cooking times per SOPs
- Ensure proper receiving and inspection of ingredients; conduct quality and inventory checks; control waste
- Maintain product quality, food safety, freshness, and strictly enforce FIFO (First-In, First-Out)
- Ensure proper food storage and accurate temperature record-keeping
- Maintain cleanliness, hygiene, equipment/tools maintenance, and workplace safety
- Manage timely disposal of garbage, recyclables, and other waste
- Develop and introduce new products for special events to engage customers
Qualifications & Skills:
- Strong communication skills in English; proficiency in Cantonese and/or Mandarin is a plus
- Minimum 5 years relevant kitchen experience, including at least 3 years in a supervisory role
- Expertise in preparing BBQ, Hot Foods, Dim Sum, Sushi, and/or other semi-finished products
- Skilled in supervising kitchen production workflows and controlling costs/waste
- Knowledgeable about workplace health and safety standards
- Familiarity with kitchen tools, equipment, and product labeling
- Basic computer skills, especially MS Office
- Flexible to work various shifts including weekends, evenings, and holidays
- Excellent organizational, problem-solving, interpersonal, and customer service skills
- Able to work independently and collaboratively within a team
